GOLDEN HOUR GRANOLA
Golden Hour Granola greets the morning with all the brightness of this magical, mystical, underused fruit - the gooseberry
2 Cups gluten free oats
1.5 Cups millet seeds
3/4 Cup sunflower seeds
3/4 Cup pumpkin seeds
1 Cup unsweetened coconut flakes
1 Ripe banana chopped
1/2 Cup coconut oil
1/4 Cup and 1 TBS maple syrup
1 TSP vanilla extract or 1/2 vanilla bean
1 TSP turmeric
1/2 TSP ground ginger
1/2 TSP Himalayan salt
1 Cup fresh gooseberries
Preheat the oven to 180C
In a large mixing bowl combine the pats, millet seeds, sunflower seeds, pumpkin seeds and coconut flakes. Mix well and set aside.
In a medium saucepan over medium heat, gently warm the banana, oil, syrup, vanilla, turmeric, ginger and salt. Cook for about 5 minutes in order for the flavours to meld together. Carefully transfer this to a food processor and process until the banana is pureed. Pour into the seed mixture and stir until well combined. Spread out onto a parchment lined baking sheet and cook for 30 minutes, stirring every 10 minutes, until golden brown and crispy. When cool enough to handle, transfer to a large mixing bowl and add the gooseberries.
